S'mores Toffee Popcorn Recipe & Meatless Monday Link Up #13

   
Pink Recipe Box's S'mores Toffee Popcorn

     WOA!  These look absolutely delicious.  We are a popcorn family...all the way from my mom to the girls.  Since Lily can't eat traditional popcorn, we pop her up some tapioca kernals!  You can read all about our PKU friendly popcorn here.
     Pink Recipe Box shared her super easy and tasty popcorn upgrade during last week's Meatless Monday.  Pink Recipe Box has a website that is full of recipes.  There are quite a few on there that I'm going to be able to tweak a little to make low protein!   For a low protein change up to the S'mores Toffee Popcorn recipe, you would need to make a few changes.

S’mores Toffee Popcorn
Yield: 2 generous servings

Ingredients
  • 1/4 cup popcorn kernels
  • 1 tablespoon oil (vegetable, olive, nut...whatever you fancy)
  • 1/2 cup white chocolate chips
  • 4 Graham crackers or Digestives
  • 1/4 cup chocolate-covered toffee pieces (I used Daim pieces)
  • 1/2 cup mini marshmallows
Instructions
  1. Place the popcorn kernels in a brown paper bag with the oil. Shake the bag around until the popcorn kernels are well-coated.
  2. Fold the ends of the bag so it is securely closed and cook at full temperature for 3-5 minutes until almost all of the kernels have popped. (For more info on cooking popcorn, take a look at this post here.
  3. Melt the white chocolate chips in a large bowl in the microwave - checking every 30 seconds to make sure you don't burn them - and stir until smooth.
  4. Separate the popped kernels from the un-popped ones and mix the popped ones into the white chocolate, ensuring they're all well-coated.
  5. Crush the Graham crackers or Digestives and sprinkle them over the popcorn with the chocolate-covered toffee pieces and mini marshmallows. Mix thoroughly to ensure everything is evenly distributed.
  6. Place in an air-tight container and leave at room temperature for around one hour to set.
   
Low Protein Substitutions & Nutritional Information:
  • *Substitute Tapioca Popping Pearls from Taste Connections for the 1/4 popcornkernals = 0 phe 
  • *1 tablespoon oil = 0 phe
  • *Substitute 1/2 cup Ghirardelli Classic White chips for the 1/2 cup white chocolate chips = 200 phe  -OR- use White Almond Bark (phe varies from 0 -20, use the PKU Food List binder for exact phe content based on product)
  • *Substitute 4 S'moreables Graham Crackers from Kinnikinnick for the  4 Graham crackers = 20 phe
  • *Substitute1/4 cup  Nestle Butterscotch chips for 1/4 cup chocolate-covered toffee pieces = 48 phe 
  • *1/2 cup mini marshmallows= 7.5 phe
