Lily and I just tried out a some-what new biscuit recipe. We've made the drop biscuits from the Low Protein Cookery for PKU recipe book by Virginia Schuett before (recipe here). This time, we used the same recipe and turned them into thumbprint biscuits. The only difference, is that Lily gets to stick her tiny thumb into the biscuit, we put some strawberry jelly into the little hole and bake them!
Here's the recipe:
2/3 cup baking mix (we used Cambrooke's)
1 1/2 teaspoons baking powder
1/4 teaspoon of cream of tartar
1/4 teaspoon sale
3 tablespoons vegetable shortening
3 1/2 tablespoons liquid coffee creamer (we used Aldi's brand)
Preheat oven to 400.In a bowl, mix together baking mix, baking powder, cream of tartar, and salt. Cut in shortening with a fork until like coarse meal. Add coffee creamer all at once and stir until smooth. Drop batter by tablespoon onto a lightly greased cookie sheet. Indent the top of each biscuit with a finger. Fill indentation with a 1/4 teaspoon of jam or jelly. Bake for 15 minutes.
Yields: 6 biscuits
