#PKU Apple Wraps Recipe & Meatless Meal Monday Link Up #18

     The other day the family and I made a quick stop at one of our local apple farms.  We really just wanted the goodies, so we didn't let the kids get out to play.  I know, I'm a bad mom, but I promise we'll go back and pick the apples and spend a lot of time playing.  But for now, we were craving warm apple donuts, apple cider, and of course their delicious apple slushies!  With all of those apple goodies, it got me thinking about other foods.  Lily and Thomas couldn't have the apple donuts, but they can enjoy a lot of other apple recipes.  This is one that I'm going to be trying out this week.  Hopefully, they'll like it.

PKU Apple Wraps

1/2 cup chopped cooked white or brown mushrooms (0.76 phe/gm)
3 tablespoons chopped fuji apple (0.05 phe/gm)
2 tablespoons chopped black or red grapes (0.17 phe/gm)
1-2 tablespoons low protein peanut butter (or lite mayo can be added)
      (Walden Farms Peanut Spread- 1.0 phe/gm)
      (Kraft Mayo Light or Kraft Real Mayonnaise- 0.20 phe/gm)
2 tablespoons honey (0 phe)
Iceberg lettuce (0.41 phe/gm)

*Optional fillings- carrots, cucumbers, or raisins (this will change the phe intake, please look up individual phe content)

1.  Chop mushrooms and fruit and mix in a bowl
2.  Add the peanut butter (or mayonnaise) and honey to the bowl
3.  Spoon mixture onto open lettuce leaf, roll and serve
       *It can also be served in low protein tortillas

Approximate Phe for 1 serving (1 wrap)- 65 mg of phe
